Beer fermentation is the biological process by which sugars in malted grains are converted into alcohol and carbon dioxide by yeast. It is one of the most important stages in beer production because it determines not only the alcohol content but also much of the flavor, aroma, mouthfeel, and overall character of the final beverage. Although brewing methods vary across styles and regions, the basic science of fermentation remains the same.The process begins after the brewing ingredients have been prepared.
